I went with several plies and laid it all out on foil with glass and then plastic top and bottom. While I used the pizza cutter to trim the shape I’ve found more recently I can just cut it with the right scissors and its much easier.
Pic 2 and you can see its a challenging layup. It was make a lot easier with my rotisserie setup and was pretty easy in the end. Like most of these jobs they need a bit of thought and preparation.
